I love Noodles, each and every type of them! We have that one small restaurant near our house that serves the best stir-fried egg noodles which me and my siblings can eat everyday for the rest of our lives without getting bored. Yes, it's that good! The soft yet chewy noodles, just perfect balance of ingredients and that appetizing aroma is worth ordering that dish again and again. Since my family is crazy for those noodles, I tried making them at home several times; experimenting with different ingredients, using different ratios and proportions of sauces and spices and even tried a couple of different cooking techniques. Finally I came up with this recipe that taste just as good as those stir-fried noodles that are served to us in a local restaurant if not better! Love cooking? Keep reading for an amazingly easy recipe that will wow your family!!
Ingredients:
Dried Egg Noodles - 1 large bowl; I used my own homemade noodles, you can use any of your favourite brand
Chicken (cut in cubes) - 1 bowl
Garlic (crushed) - 2 tbsp
Baby Corns (diced) - 1 bowl
Mushroom (sliced) - 1/2 bowl
Capsicum - 1 medium size
Onion (sliced) - 2 small size
Light Soy Sauce - 2 tbsp
Chicken Powder - 2 tbsp
Cornflour - 1 tsp (heaped)
Sugar - 1 tbsp
Oyster Sauce - 1 tsp
Salt - Just a pinch; don't add much salt since you're adding chicken powder & soy sauce that already contain it
Freshly ground black pepper - 1 tsp; fresh tastes better, avoid adding previously grounded pepper if you want best results
Oil - 3 tbsp
Water - As needed

Procedure
- Boil your noodles as per the instructions of the packet, if you use homemade noodles, they will take only 3-4 minutes so watch out.
- Cut all your vegetables before hand, keep all your ingredients at your kitchen counter for easy access as you will be doing some high flame cooking and you don't want your veggies to be overcooked while you're approaching for some salt or pepper.
- Put your wok on high heat, let the wok heat up before you add any oil to it.
- Add oil and then crushed garlic, cook for 30 seconds and add sliced onion.
- Add your chicken, make sure that you do it on a very high flame; chicken when cooked on high flame retains its moisture and turns out very juicy and tender.
- Cook your chicken for 3-4 minutes, when it changes its colour to white then add mushrooms and baby corns and cook for more 30 seconds.
- Now its time to add your capsicum, also add salt, pepper, sugar, soy sauce and oyster sauce, keep stirring.
- Fill a cup half with water and mix chicken powder and corn flour in it, add this to your chicken and veggies and cook for another 30 seconds.
- Add your boiled noodles to your stir-fried vegetables and chicken, stir well and dish out.

Yum! Carb heaven. By homemade noodles, did u mean u made ur own, or those fresh noodles available at some stores? Also try adding a few drops of sesame oil after you're done cooking for that restaurant flavor!

Yes why not Aiza, it actually took few ingredients including flour, eggs, a pinch of salt and a LOT of kneading, rolling and cutting! I'll try an upload some photos of the process soon. xx
